Charles Hubert de Castella (1825-1907) and Paul Frederic de Castella (1827-1903), landowners and vignerons, were born, Hubert on 27 March 1825 and Paul on 22 May 1827, at Neuchâtel, Switzerland, the first of three sons born to Dr Jean François Paul de Castella, and his second wife Eleonore, née de Riaz. Hubert was educated by the Jesuits at Fribourg, went to Germany and in 1843 to France, where he studied architecture for some years and was naturalized. From December 1848 to December 1853 he served with the 1st Regiment of the Chasseurs. Paul began work in a bank in 1843 and in 1847 went to England to learn the language and study commerce.
Paul arrived at Melbourne in the Royal George on 28 November 1849, influenced by reports from neighbours who had migrated earlier from Neuchâtel, including Mrs C. J. La Trobe. In 1850 he bought the station of Yering, which had been established by the brothers, Donald and William Ryrie, in 1840; its 30,000 acres (12,140 ha) included a vineyard of ten acres (4 ha) planted by the Ryries about ten years earlier. From 1853 to 1859 he also owned Quamby, a station of 25,000 acres (10,117 ha) near Port Fairy. In 1852 he relinquished all but 2000 acres (809 ha) of Yering, where he successfully raised cattle and bred horses, and increased his vineyard to 100 acres (40 ha). In the many international exhibitions at which Victorian wines were shown he appeared more often as a commissioner than as an exhibitor but he did win several prizes, the most notable a Grand Prix at Paris in 1889. In that year he became a member of the Board of Viticulture in Victoria. In 1856 he had married Elizabeth Ann, daughter of Lieutenant-Colonel Joseph Andersonof South Yarra; they had one son and three daughters. Paul died at Fairlie House, South Yarra, on 14 March 1903.
Hubert arrived at Melbourne in the Marlborough on 23 March 1854. In April 1855 he bought for £7868 from Donald Ryrie the 15,000-acre (6,070 ha) station of Dalry, adjoining Yering. There he ran cattle in partnership with Guillaume de Pury but in January 1856 returned for family reasons to Switzerland, leaving Dalry in the care of his partner who sold it in 1858 and went to Switzerland in 1861. In 1862 Hubert and de Pury returned to Port Phillip in the Great Britain, intending to take up sheep farming. Discouraged by the high price of sheep but encouraged by the growing reputation of Victorian wines, they decided to establish vineyards. He bought part of Yering, which he renamed St Hubert's, and planted about 100 acres (40 ha) in vines, later increasing his vineyard to 250 acres (101 ha).
The development of the vineyard was long and expensive, made possible only by the gradual sale over nearly twenty years of his wife's properties in Sydney. To compensate for his inexperience as a vigneron and to master the problems of fermenting grapes grown on a new soil and in a new climate, Hubert read and travelled widely; to overcome marketing difficulties he took into partnership in 1859 Andrew Rowan, who opened cellars in Melbourne. The turning-point in the success of the vineyard was the winning at the 1880 Melbourne Exhibition of a trophy offered by the emperor of Germany for the Australian exhibitor whose product showed the greatest artistic or industrial progress.
Hubert de Castella was devoted to his adopted country. His first book, Les Squatters Australiens(Paris, 1861), is an account of his first stay in Australia. It was written as a rejoinder to Les Voleurs d'Or by the Comtesse de Chabrillan, a book which Hubert declared was 'full of guile and of disparagement of a land and people she had not known'. In his next book, Notes d'un Vigneron Australien, addressed to the governors of the Bordeaux Exhibition in 1882, he described the development of his own and other Victorian vineyards and the experiments he had made on fermentation problems. In 1886 he wrote John Bull's Vineyard, a more general account, intended to serve as an introduction to the Australian exhibit at the Indian and Colonial Exhibition in that year.
Hubert de Castella returned to Switzerland in 1886 after an estrangement from Rowan, leaving the management of the vineyard to his oldest son, François. He still retained his interest in Australia and in June 1888 read a paper to the Royal Colonial Institute on wine-growing in the British colonies. He returned to Victoria in November 1906 'to enjoy once more the warmth and brightness of the Australian sunshine'. James Froude, who visited St Hubert's in 1885, described him as 'an amusing companion' and 'a vigorous hale-looking man … with lively French features, light-grey merry eyes with a touch of melancholy at the bottom of them'. He was also an artist of talent: he painted landscapes in oils, and engravings based upon some of his work appeared in the first volume of Le Tour du Monde (1861). He died at Ivanhoe, Victoria, on 30 October 1907. On 9 September 1865 he had married Alice Frances, daughter of Robert Pitt Jenkins, member of the New South Wales Legislative Council; they had five sons and five daughters. Their oldest son, François Robert (1867-1953), became viticultural expert to the Victorian government.

François Robert de Castella (1867-1953), viticulturist, was born on 16 January 1867 at South Yarra, Melbourne, son of Swiss-born Charles Hubert de Castella, vigneron, and his wife Frances Alice, née Jenkins, from Sydney. In 1879-82 François was educated at Xavier College, Kew; there, at his father's insistence, he was served wine with meals. He left Australia in 1883 to study natural science at Lausanne, Switzerland, and vine-growing and wine-making in France.
On his return in 1886, de Castella managed St Hubert's vineyard at Yering, owned by his father in partnership with Andrew Rowan. After Rowan purchased Hubert's share in 1890, François joined the Victorian Department of Agriculture as a viticultural expert. He travelled throughout the State, advised vignerons and wrote the influential Handbook on Viticulture for Victoria (1891). Retrenched in 1892, he purchased Tongala vineyard and in 1896 became manager of Chateau Dookie for the Bank of Victoria.
Following the outbreak of grape phylloxera at Bendigo, in 1894 de Castella condemned the Victorian government's policy of vineyard eradication. He supported regional quarantine and the introduction of phylloxera-resistant, American rootstocks, as had been done in Europe. Although he was aware of the latest methods adopted by the French in combating the pest, his advice was ignored.
In 1907 the Victorian wine industry verged on collapse. At the behest of Hans Irvine, de Castella was again appointed viticultural expert with the Department of Agriculture. That year he was sent to Europe to obtain further information on the control of phylloxera. This journey, fully documented (1907-09) in the Victorian Journal of the Department of Agriculture (to which he was a frequent contributor), was the basis for the reconstitution of affected vineyards in central and northern Victoria. At Rutherglen de Castella cultivated varieties of rootstocks for Australian needs and developed the technique of field-grafting. His tour also led to the introduction of cultures of flor yeasts for producing delicate, dry sherries of the fino type.
Dark bearded, energetic, intelligent and purposeful in his youth, and silver-haired and sprightly in old age, de Castella was known to his departmental colleagues as Cas. To the wine merchantSamuel Wynn, he combined the 'lively cultivated manners of a European aristocrat' with the 'honesty, matiness and deep practicality of the true Australian'. Fluent in French, de Castella was a prolific writer in English, and also an active broadcaster and educationist. His friends considered him a confirmed bachelor and were surprised when, on 31 January 1923, at St Patrick's Cathedral, East Melbourne, he married a 33-year-old nurse Phyllis Yvonne Van Hemert Silvestre (d.1936). Following his retirement in 1936, the Phylloxera Board of South Australia commissioned him to report on the grape varieties of that State. His achievements, especially in ampelography, were recognized abroad. He was appointed to the French Ordre du Mérite Agricole in 1937.
De Castella enjoyed life and was a regular at Camillo Triaca's restaurant, 'the Latin'. He coined the term 'eubiotics', for the science of good living, and was foundation president (1936) of the Victorian branch of the Wine and Food Society. Survived by his three sons, he died on 12 May 1953 at Charterisville, his Heidelberg home, and was buried in nearby Warringal cemetery. A portrait by Will Rowell is held by the family.

Frédéric Guillaume de Pury (1831-1890), wine-grower, was born on 15 December 1831 at Neuchâtel, Switzerland, the eldest son of Edouard Charles Alexandre de Pury and his second wife, Julie de Sandoz-Travers. His father was a member of the Grand Council of Neuchâtel, and the family bore the hereditary title of baron, given them by Frederick II of Prussia. In 1851 Guillaume went to England to study English and agriculture and on 6 May 1852 he sailed for Victoria. There he first tended cattle at Yering, a property in the Yarra valley owned by Paul de Castella. In 1855 with C. H. de Castella he bought Dalry, a former out-station of Yering.
Guillaume was joined at Dalry by his brother Samuel (1836-1922) who had just arrived from Switzerland. In 1857 Samuel arranged to plant a hundred acres (40 ha) of vines on Yering but lost money after two years and relinquished the contract to Joseph Deschamps. In 1860 he bought a part of Yering near Lilydale and named it Cooring Yering. There he planted a vineyard of ten acres (4 ha) and built a house and wine cellar. In Switzerland six years later he became engaged; he returned to Victoria in 1867 but after his marriage in Switzerland next year to Louise Augusta Albana de Coulon he remained in Europe. Cooring Yering was sold in 1870. Samuel had taken a keen interest in the development of the Yarra valley area. He was a magistrate and in 1862 first president of the Upper Yarra District Roads Board and a member of it until he left the country.
Guillaume sold Dalry in 1858 and rented land on near-by Killara to graze sheep and breed horses. He visited Switzerland in 1861 while his brother looked after his interests at Killara. In 1863 with George Langdon he bought from Paul de Castella's creditors 900 acres (364 ha) of Yering which he called Yeringberg, and began a vineyard there. He bought out Langdon in 1869. Yeringberg was later enlarged to 1160 acres (469 ha) with some 60 acres (24 ha) under vines and the remaining area for grazing. By the mid-1880s de Pury had built cellars capable of storing over 30,000 gallons (136,407 litres) of wine and was making over 20,000 gallons (90,922 litres) a year, much of it exported to England. The three vineyards of Yeringberg, St Hubert's and Yering were pioneer developments of the wine industry in the Lillydale district. However, profits declined and by 1921 when the vines of Yeringberg were uprooted wine production in the area had almost ceased. The dry table wines of the district were famous for lightness and quality. Wines made by Guillaume and later by his elder son George won gold medals in London, Bordeaux, Paris, Brussels and San Francisco, as well as many prizes in Australia.
Guillaume was a leader of the Swiss community of Lilydale. In 1875-90 he was consul for the Swiss Confederation in Melbourne. He became a justice of the peace in 1862 and was a member of the Upper Yarra District Roads Board for twenty-one years. When Lillydale was proclaimed a shire in 1872 he was one of its first councillors and president for nine years. He and his wife gave substantial support towards building the Church of England at Lilydale. Guillaume took an interest in the Aboriginals of the Yarra tribe; he was a friend and adviser of Barak who often visited Yeringberg, and in 1881 served on a government inquiry into the condition of the Aboriginal station at Coranderrk.
On 2 February 1869 at St James's Cathedral, Melbourne, Guillaume married Adelaide Augusta, the eldest daughter of Charles Ibbotson of Geelong; they had two sons, George Alphonse (1870-1956) and Montague Edouard Victor (1873-1961). In 1883 the family visited Switzerland and returned to Victoria next year, leaving George to study in Neuchâtel. Guillaume was appointed a commissioner of the 1888 International Exhibition in Melbourne. Although his health was deteriorating he made two more trips to Switzerland and on the second died suddenly at Lausanne on 11 November 1890.

Victor Joseph Clement Deschamps (1812-1878), vigneron, was born in 1812 at Cressier, Neuchâtel, Switzerland, son of Antoine Marie Deschamps, a vigneron who had migrated from Saint Pierre-Le-Vieux in southern Burgundy, France, and his wife Marie Anne, née Corbet. Joseph managed a large vineyard estate at Peseux and had a small, 3-acre (1.2 ha) vineyard outside the town. In 1835 he married Susanne Catherine Duvoisin (1813-1897), by whom he had three sons.
According to family sources, Lieutenant-Governor La Trobe, who had known Joseph at school in Switzerland, encouraged him to come to Victoria. After he arrived in January 1854 in the Kerin Hasselaar with his sons Louis Auguste (1838-1900), known as Auguste, and Jean Louis (1842-1884), known as Louis, they stayed with La Trobe at his home, Jolimont, in Melbourne. Catherine and the youngest boy Joseph Clement (1844-1887), known as Clement, came two years later. Intent on vine growing, Joseph toured the Geelong and upper Yarra valley districts, rejecting the soils of the latter as too fertile. He then secured 100 acres (40.5 ha) at Kyneton in 1854, 15 acres (6.1 ha) of which he planted with vines. This experience was a disaster. Frost destroyed his infant plants and bushfires the property. Their meagre savings gone, the family settled at Lilydale where they contracted to work for Paul de Castella, another Swiss immigrant who had been known to Joseph at Neuchâtel. Deschamps senior was naturalized in 1857, Louis in 1862.
At the first Lilydale land sales in 1860, Joseph purchased 90 acres (36.5 ha) on both sides of the village, which his sons cleared and transformed into three vineyard holdings. Auguste had Lilydale and Pine Grove vineyards, 35 acres (14.2 ha), now known as Deschamps Hill, Louis the Olinda vineyard of 18 acres (7.3 ha) and Clement the Market Street vineyard of 30 acres (12.1 ha). Having settled his sons, Joseph then purchased a smaller allotment on Mont Albert Road, Boroondara, on the outskirts of Melbourne, planted a small vineyard and eventually retired.
The Deschamps made excellent wine, winning prizes both at home and abroad. A base wine grown and made by the family into Champagne-method sparkling wine for the entrepreneur L. L. Smithwas a success at the Melbourne International Exhibition of 1880-81. Melbourne and Geelong cafés took the bulk of the six to eight thousand gallons produced annually by the brothers. Brandy was also made at Clement's vineyard (1500 gallons [6800 litres] in 1877) and the family ran a cellar for sales in Melbourne. They established a business for splitting vine stakes and fencing posts for vignerons and a cooperage. In 1872 Louis was a member of the first Lilydale Shire Council.
For touring parties Lilydale became a picturesque stopping point and a gateway to the vineyards and hills beyond. A wine hall built by Louis in 1878 included a skittle alley and was itself a local attraction. For one excursionist, J. S. James in 1885, the vineyards 'planted right down the slopes into the town', the sloping hills, valley vistas, cool atmosphere and clear sky reminded him of Bavaria. Joseph died on 2 March 1878 at Boroondara and was buried in Lilydale cemetery.
Additional migrants from Switzerland followed the Deschamps example, working for vignerons and then branching out. De Castella's brother Hubert reflected that it was the immigrant workingmen and their families, not the aspirant Swiss grandees, who succeeded as viticulturists and winemakers in the new land. To him, the Deschamps were exemplars of the Australian story. Hard work and expertise saw them prosper. The Yarra Valley never experienced the devastation caused by Grape Phylloxera but the collapse of the industry in the 1890s depression saw the Deschamps family wine enterprises wither as did larger concerns. The last surviving was the Olinda Vineyard, which closed in 1913. The three brothers all left descendants.
